Winemaking | At 4am on the 16th of February 2021, we commenced harvest in the coolest part of the day and delivered the fruit to the press at our winery within 25 minutes. Cold settled and fermented cool at 10 degrees celsius in tank. Made in the Charmat method of sparkling production.
Colour | A generous bead of bubbles with a soft pale straw hue.
Aroma | Crisp green apple with a jasmine overtone.
Palate | Crisp and light on the palate leading to a lingering sense of smooth bubbles that ensure you feel refreshed.
Food matches | Enjoy with prosciutto, stuffed mushrooms, creamy sauces, almonds, seafood, fried fare, spicy Asian dishes. Also excellent with pastries, biscuits, cakes and other sweet things.
