See Saw Fulcra wines are the ultimate expression of Orange and Australia’s best cool climate varietals - chardonnay, pinot noir and shiraz. The Fulcra ultra premium range is produced using small parcels of fruit from our very best vines, right down to the row, all sourced from our three vineyards.
2018 is the world premiere of our first releases and includes two varieties - Chardonnay 2017 and Shiraz 2016.

See Saw Fulcra Chardonnay 2017
Winemaking | Hand harvested at 6.30am on the 17th of March 2017. Placed into slotted bins that allow cool air overnight to ensure the fruit is at 8 degrees Celsius. The fruit is then pressed on a gentle champagne cycle to ensure the purest of juice.
This juice is then placed straight into barrels for a full wild yeast fermentation and then partial malolactic fermentation which is stopped once mouth feel is judged as excellent. Lees are stirred every 3 weeks on each barrel. The barrels are a combination of 20% new French oak and 80% older French oak. The wine is held in oak for 9 months and blended before bottling.

Aroma | Fresh Granny Smith apple with a hint of peach.
Palate | Elegant apple and understated white peach, a line of lemon curd that is backed by a fine acid and a perfectly intergraded oak line.
Food matches | Raw and lightly cooked shellfish like crab and prawns, steamed or grilled fish, fish pâtés, chicken or vegetable terrines and pasta or risotto with spring vegetables.
