The INVERGO range showcases the most interesting varieties or creative techniques to come out of the season. Enjoy!
Harvested from Springvale vineyard (Abel clone) and Balmoral vineyard (777 clone). Both batches were whole berry tipped into open fermenters for a 3 day cold soak prior to fermentation. Once warm, fermentation commenced with daily hand plunging. Left on skins for 12 days, must was pressed to French oak puncheons of varying ages. Malolactic fermentation completed promptly, thanks to co-inoculation, and the barrels were mostly left for winter with regular topping. Barrels were hand selected for the new Invergo Pinot Noir and put together in tank. The wine was lightly filtered prior to bottling in October 2022.
