Winemaking | Harvested from Balmoral vineyard in the early morning on 6th March 2021. Whole berry pressed and fermented in French Oak. Matured for 8 months, with fortnightly lees stirring to build complexity, prior to blending. Lightly filtered and bottled in December 2021.
