The INVERGO range showcases the most interesting varieties or creative techniques to come out of the season. Enjoy!
Winemaking | Harvested from Balmoral vineyard (900m elevation) on 6th April. Following a cold soak (whether we liked it or not, it was chilly by April in Orange!), we fermented in open top vessels. Hand plunged once per day; the electric colour developed beautifully. No new oak was used to capture the vibrancy of noveau Gamay. Lightly filtered and bottled in October 2022. Thrilled to be launching our first straight Gamay!
Colour | Bright bright purple
Aroma | Violets, juby red berries and a hint of bubblegum
Palate | Light bodied with lively acidity. Rhubarb, raspberries, and mulberries all play on the palate. Could be served slightly chilled if you wish!
Food matches | Always a winner with French charcuterie such as patés, terrines, rillettes and saucisson sec and with white-rinded cheese
