Pinot Noir is the ultimate test of patience and timing. It requires an exact balance of slowly ripened fruit flavour and natural acidity, framed with silky oak tannins. That’s always our goal with our Pinot.
Grape variety - 100% pinot noir.
Winemaking - The sustainably grown grapes for this pinot noir come from two clones, MV6 and 777. The fruit was fermented by wild yeast in small open fermenters prior to maturation in a combination of French and Hungarian oak puncheons and stainless steel.
Colour - Garnet red.
Aroma - Vibrant perfumed with aromas of dark cherry and herbs.
Palate - Medium bodied with attractive cherry and plum flavours, balanced by light tannins.
Food matches - Enjoy with light, crispy duck salad or a range of richly flavoured cheeses.
