Pinot Noir is the ultimate test of patience and timing. It requires exact balancing of slowly ripened fruit flavour and natural acidity framed with silky oak tannins. That’s always our goal with our Pinot. Try it with duck, cured meat or perhaps even a rabbit pie!

REGION: Orange Region, NSW Central Highlands
GRAPE VARIETY: 100% Pinot Noir
WINEMAKING: The grapes for this Pinot Noir come from two clones, MV6 and 777. The fruit was fermented by wild yeast in small open fermenters prior to maturation in a combination of French and Hungarian oak puncheons and stainless steel.
COLOUR: Garnet red with a pale crimson hue.
AROMA: Vibrant perfumed varietal Pinot Noir aromas of dark cherry and herbs with balanced smoky oak adding complexity.
PALATE: A medium bodied Pinot Noir with attractive cherry and plum flavours held within a balanced palate supported by light tannins and a lovely persistence.
WINE ANALYSIS: Alc/vol: 12.7%
ADDITIVES: Made using traditional methods. Some traces of egg products may remain. Preservative 220 added.
PEAK DRINKING: Enjoy now or age till 2019.
FOOD MATCHES: Enjoy with a light, crispy duck salad or a range of richly flavoured cheeses.
